No Cook Marshmallows

This recipe was given to me by a dear friend and we have used it ever since. The marshmallows have a wonderful texture, much different from commercially prepared marshmallows. Any flavor that we make them in is delicious!

No Cook Marshmallows

These fluffy, simple, and tasty marshmallows are a favorite of every Christmas time. They are requested EVERY year!

Ingredients

  • 4 Tbs Knox gelatin

  • 2-1/2 cups granulated sugar

  • 2-1/4 cups cane syrup (divided)

  • 1 cup cold water (divided)

  • 1 tsp vanilla extract (or flavor of your choice)

  • food coloring – if desired

Directions

  • Soak 4 Tbs Knox gelatin in 1/2 cup cold water
  • warm together (just below boiling point): 1/2 cup water, 1-1/2 cup cane syrup & sugar
  • when warm, add gelatin and stir until dissolved
  • pour into mixer bowl and begin to mix
  • then add 3/4 cup cane syrup
  • add vanilla or flavor extract of your choice
  • add food coloring if desired
  • whip until fluffy and doubled in bulk
  • While whipping marshmallows: line a 12″ x 15″ or 12″ x 18″ pan with parchment paper
  • lightly spray parchment paper with cooking spray
  • pour marshmallow into parchment-lined pan
  • Let set for 24 hours before removing from pan for cutting
  • Cutting Marshmallows
  • dust cutting board with powdered sugar
  • turn pan upside down over cutting board
  • carefully peel parchment paper away from marshmallow
  • dust the newly exposed “top” of the marshmallow with powdered sugar
  • cut with pizza cutting wheel, into vertical strips. As each strip is cut, roll strip onto it’s side into dusting of powdered sugar.
  • Once all the vertical strips have been cut and rolled onto their sides, they will be nestled together with the sticky cut side facing up. Dust the sticky top side of the vertical strips with powdered sugar.
  • cut vertical strips horizontally, making little square marshmallows
  • roll marshmallow squares through powdered sugar to prevent them from sticking together.

Notes

  • We usually make one batch each of vanilla, peppermint, cinnamon, & Irish cream
  • We gift these at Christmas time and they are requested EVERY year
  • One year I didn’t seal them tightly in plastic and they dried out. They were hard little marshmallow… and they were PERFECT for putting into hot cocoa!!
